Taqueria Aurora Returns to Burlington with Fresh Flavors and Community Spirit

BURLINGTON, IL – After a brief hiatus, Taqueria Aurora has officially reopened in the Village of Burlington, bringing back its signature fresh flavors and homemade Mexican cuisine.

Owned by Jazmine Llamas and the Velazquez family, the taqueria first launched in Aurora, IL, in December 2018 before expanding to Burlington in 2022. However, staffing challenges in the post-pandemic era led them to rent the space. Now, with the restaurant back under its original ownership, the Burlington community is savoring the return of its beloved eatery.

“We reopened in August 2024 after the previous tenants moved out,” said Llamas. “It was tough to manage two locations right after the pandemic, but we’re thrilled to be back in Burlington. The support from the community has been incredible.”

A Taste of Tradition

Taqueria Aurora isn’t just a name, it’s a tribute. While it acknowledges their first location in Aurora, it also honors Llamas’ grandmother, Aurora, whose warmth and love inspire the restaurant’s dishes. Every day, the kitchen handcrafts chips and salsas using fresh ingredients, creating flavors that transport diners to a home-cooked meal in Mexico.

“What people love most is our salsas,” Llamas shared. “The flavors and spices are bold, everything is made fresh, and it really feels like homemade food.”

It’s no surprise that Mexican cuisine ranks high on America’s list of favorites. According to YouGov.com, a staggering 86% of Americans place Mexican food in their top three cuisines. At Taqueria Aurora, the best-selling dish is their high-quality skirt steak, Tampiqueña, followed closely by their gyro-style Pastor, slow-cooked on a rotating spit for authentic flavor.

From Jalisco to Burlington: A Culinary Journey

Llamas’ family hails from Arandas, Jalisco, a region renowned for its rich red soil, which plays a key role in tequila production. In fact, 74.3% of the world’s tequila originates from this area. The restaurant’s artwork proudly displays the landscapes of Arandas, paying homage to their roots while welcoming diners into a space filled with heritage and history.

Burlington’s Warm Welcome

What makes Taqueria Aurora’s return even more special is the overwhelming support from the Burlington community.

“Everyone here is so tight-knit and welcoming. We constantly see familiar faces, and people even show up in unique ways—we’ve had customers arrive in golf carts, and one even came on horseback!” Llamas laughed.

While most of the staff are from Aurora, many choose to work shifts in Burlington because of the inviting atmosphere.

“It’s such a different feel here,” Llamas added. “The conversations are richer, and the community is genuinely warm.”

Beyond the Restaurant: Catering & Community

Beyond its daily offerings of breakfast, lunch, and dinner, Taqueria Aurora provides catering services for events ranging from intimate 20-person gatherings to grand 350-person weddings. Llamas personally oversees each catering event, ensuring quality and authenticity in every dish.

The restaurant also offers several alcoholic beverages, featuring margaritas, beer, paloma’s, micheladas, and a variety of soft drinks, along with vegetarian and seafood options, including shrimp, fish, and tilapia dishes. On weekends, guests can enjoy traditional specialties like Carnitas, Birria, Menudo, and Consommé.

Giving back is a core value for Taqueria Aurora. With its location right across from the youth football field, the restaurant proudly sponsors local sports teams by providing t-shirts and other support. First responders also receive a 10% discount as a token of gratitude for their service.

“We’re always so grateful for what they do,” Llamas said. “It’s just a small way to say thank you.”

Grand Reopening Celebration

To celebrate its return, Taqueria Aurora is hosting an Open House from 10am until close on Thursday, March  6th.  A Ribbon Cutting Ceremony will take place at 10:15am.
